Parboiled rice is prepared by soaking the whole paddy in cold water for about 24 hours. The soaked paddy is then steamed for about 10 minutes. The paddy is then dried and milled like the other rice. During the soaking of the paddy, most of the vitamins and mineral salts and some protein are carried by the water into the endosperm where they are absorbed by the starch. During the steaming, the starch grains on the outer part of the endosperm are gelatinized and will seal off the nutrients in the inner part of the endosperm. When parboiled rice is milled, most of the nutrients are retained.

Rice milling is an important stage in the post-production of rice. The timing of the process can vary. In most cases, milling is done before the storing. In some cases however, rice is stored as paddy/ brown rice, and milled right before consumption. Milling may be a single-step, two step or multi-step process. As the term suggests, the husk and bran are removed in a single-step in the one step/ single-step process. In the two step process, the husk and the bran are removed separately, in two steps. In a multi-step process, the grain goes through multiple operations in order to become white. Modern-day sophisticated rice mill machinery removes the impurities & foreign bodies in the paddy to start with - dirt, straw and stones to start with. The husk is removed the next. A portion of the grains still have the husks on, post the husking process. These are sent back for husking. Finally, the brown rice obtained is passed through the machine(s), so that its bran is removed, and white rice is obtained. There is more than one method to do this. Any broken kernels of rice are then discarded. Selling whole white grains with broken kernels means a compromise in quality. High-quality rice should contain as few broken kernels as possible.

An integral process of rice production is rice milling. And just like in any nation where rice is produced on a large scale, rice milling has been around for a very long time in India. The need for milling arises because paddy cannot be consumed in its raw form and requires suitable processing. Owing to this huge global demand for rice, rice milling, today, is a fast-growing agro-business which you can successfully leverage for financial benefits. However, being a commercially profitable business, setting up a rice mill requires extensive knowledge and capital. During the rice milling stage, rice grains move through a multifarious process. It's ushered through a number of sorting machines, wherein the grains are sufficiently processed.

There are different types of methods used in the rice milling industries. In the earlier days, conventional methods were used for paddy processing using the steel hullers and the rice processing process mentioned in the above flowchart was carried out manually. This method seems to be the inefficient method as the chances or the profits to rise at the higher level often degrades. The marketing costs and the net returns tend to decrease that prevents the consumers from earning accountable outputs in time. Further, the latest and modern rice milling units make use of more efficient technology that hep them yield a large net return and the calculated costs become better for the large quantity of paddy separator. Roughly, we can say that capacity utilization using the modern methods is approximately 70% in comparison to the conventional methods used (approx. 45%). Rice is the staple food and is one of the man source among all the food grains.
