June 10, 2016: Noodles are very popular in China. Chow mein and lo mein are the well known Chinese food in the world prepared from wheat-flour egg noodles. Both of these two dishes come from northern China where wheat dishes are more popular than rice dishes. People often believe that main difference between chow mein and lo mein is the kind of noodles that are used.

Lo mein means tossed noodles, while chow mein means deep fried noodles. There is difference in taste between lo mein and chow mein dishes. This is because the preparation of chow mein vs lo mein dishes are different. The dry chow noodles are boiled in water for five to six minutes while fresh lo noodles are boiled only for two to three minutes.

The chow noodles are fried separately into a noodle pancake and then the stir fry mixture of vegetables and meat or egg are added and cooked properly until they are crispy. There are two types of chow mein namely; steamed chow mein and crispy chow mein. The steamed version has a softer texture while the other one is crispier and drier. While fresh, boiled lo noodles are added to a stir fry mixture with a lot of sauce. They are tossed together for a long time until they soak the sauce.

The primary difference between chow mein and lo mein is the cooking time that depends mainly on the noodle thickness according to the package instructions. Chow mein contains high fat since they are allowed to boil for a long time. While lo mein contains more sodium due to high sauce content.
